Crispy aubergine

In the spirit of "who does that", I try the crispy aubergine.

Aubergine does not want to be crispy, tis not its natural state. Aubergine is creamy, delicious, deep and rich.

It does not want to be sliced thin, have edges and have some serious frying done to it. Tellingly, the skins had to do most of the work to make the softness seem harder and edgier.

There is an analogy to be made to people and our natural states.
