Steak tartare
Decades ago, a friend introduced steak tartare in his restaurant with table service. Customers who loved steak jumped for the opportunity to try it with a mayonnaise-based sauce.
Table service was as unknown as steak tartare then - he was present every time a customer got angry. Which was every time.
To be served raw meat cut up in front of them was many steps too far for them.
Breaking expectations only works when people want and expect it.
